banana & carrot muffins.







































easton is not much of an eater. he rarely eats dinner. we have a rule in our house that he is only served what we eat. so, if we are having carrot soup and he doesn't want it- he goes to bed without dinner. i believe that if he's hungry enough, he'll eat. i've seen him do it. 

with that said, in the morning he is usually famished. he will eat almost anything i put in front of him. so my greatest goal at breakfast time is packing in as many nutrient dense foods as possible. i feed him oats, fruit, berries, yogurt, etc etc. muffins are a great way of packing in anything and everything healthy and delicious (even veggies!!). here is my go-to recipe for seriously yummy banana muffins.

Ingredients: (yields 12 muffins)
  • 2 ripe bananas (large)
  • 1/2 cup sugar
  • 1/4 cup applesauce (i use regular or cinnamon flavored apple sauce)
  • 1 cup white whole wheat flour (regular flour works too!)
  • half a large carrot (finely grated), or zucchini (finely grated)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • crushed walnuts (if you like them)
  • 1 teaspoon vanilla extract
  • 1 egg
  • one tablespoon brown sugar (if you want, but they are delicious without it, too!
Method:
Preheat oven to 350 degrees (F). Mash bananas and mix in sugar. Stir in the remaining ingredients, until the flour is just incorporated. Pour batter into prepared muffin tins and bake for approximately twenty minutes, until a toothpick comes out clean.

Honestly, nothing makes me happier than watching my little boy eat healthy food. These muffins might have some sugar but it is far less than he gets from a store bought breakfast bar or granola bar! Eat on little Muffin Boy, eat on!
