Food: Chicken Tacos in Butter Lettuce



Tacos have been a go-to for Tony and I for some time now. He still doesn't eat meat of any kind, but I had to bring some chicken back into my diet to help me stay fuller, longer. Tonight for dinner I made chicken tacos, sans taco shells. I used butter lettuce instead which is a really great option when I'm trying to cut calories, carbs, and wheat. Here's ma recipe:

What you'll need:
1 red pepper, chopped
1 orange pepper, chopped
1 (smallish) zuccini, chopped
1 carrot, chopped
1 chicken breast
1/2 avacado
1 cup quinoa

What to do:
Cook quinoa until soft and fluffy. (Boil 1 cup quinoa with 2.5 cups water (or veggie broth). Let all of the water cook out. Set aside with the lid on so steam can finish cooking.)

Season chicken breast with salt, pepper, and thyme to taste. Grill the chicken breast on the stove, cube it, and set aside.

Cook veggies in some olive oil, chili powder (if you're so inclined), and red pepper flakes, until they are soft with a small bit of crunch.

Put all the ingredients on the butter lettuce for a healthy little taco. Add avocado and salsa to garnish.
