At church on Sunday our pastor encouraged the congregation to take a "$5 for 5" challenge. For five days, eat on no more than $5 a day (per person). He told his church that in doing so, we will eat in the same way as BILLIONS of people in the world. The purpose, you ask? To truly understand what it is to worry about the cost of food. To eat less and know the feeling of hunger, more. To feel grateful, TRULY grateful for what we have and really feel the gratitude for Thanksgiving's feast....

We didn't carve a pumpkin on Halloween with Easton. Blame it on his 6pm bedtime, or the fact that I was consumed with packing for our Mexican vacation. Either way, it didn't get done. I decided that today would be a great day to play in the pumpkin guts. So, I carved the top off (of which Easton affectionally called a "hat") and let Easton play with the pumpkin and all of it's gooey goodness. He seemed a little cautious of the pumpkin at first. Once he realized that it was cool- he was in to it...hat and all. He loves putting tops on things...so he really enjoyed taking the pumpkin "hat" on and off! I just love watching that baby explore.
Angela and Reggie did their wedding right. They invited 45 of their closest family and friends, hosted a beautiful boat cruise for their rehearsal dinner (to which they invited everyone who came to Cabo for the wedding), and said their vows on a cliff overlooking the ocean. It's hard to get more picturesque than a ceremony overlooking the ocean. Just sayin.....

For those who know me, you know that I am OBSESSED with hippos. It felt fitting that my new name reflect this obsession. Remember when I wrote about wanting to change things up?!?! Well soon after that post, my hub and I threw around name ideas and this one came to us. Right away we fell in love with "Red Hippo!" My pal Colleen (who also makes amazing deserts) designed this fabulous logo! I mean, it really couldn't be any more perfect...don't cha think?!?
Tony and I just got home from a fabulous trip to Cabo San Lucas! My best friend Angela had a destination wedding, and I was lucky (and completely humbled) to be a part of her day.
Together with Angela's aunt and cousin, we threw a impromptu bridal shower the day before the wedding. Angela's family and friends are spread all across the country and Mexico was the only time we could all be together to celebrate Ang in such a special way.
