FOOD: Spicy Black Bean Soup

Spicy Black Bean Soup
Serving Size: 1 cup
Makes 6 servings

I created a black bean soup recipe the other week which I thought I'd share wit ya. I was inspired by a really thick and creamy bean soup that Tony and I ate at The Plant in San Francisco. The soup I made was really tastey- and I literally ate it for lunch four days in a row.  Black bean soup is so filling, and full of protein- you know, it's a healthy thang! Here is my recipe, hope you like it!

What You'll Need:
1 15oz can of Black Beans
1 15 oz can of Spicy Black Beans
1/3 cup fresh pico de gallo
4 tbsp Fresh salsa
3 cups water

The Fixins:
1 Avocado
1/2 Bell Pepper (any color you'd like :)
Green onion (a.k.a. Scallions)

What to do:
Combine the ingredients in a pot on the stove, bring to a boil and then let simmer for 15 minutes. While it's simmering, get all your fixins' ready! Put the soup mixture in the food processor on the "thinnest"setting (I used the "Pulse" setting). Once it is pureed, it's all finished! C'est fini! Put it in a bowel and throw in a little fresh cut bell pepper, onion, and avocado, and ENJOY!
