We like to keep things nice and healthy in the Frascone household. We've stopped eating meat so we are finding new and improved ways of eating our favorite dishes. Take tacos, for instance. Tacos are one of those meals that we just can't live without. Here is what we've come up with to keep our favorite dish in our tummies, sans meat.
What You'll Need:
-whole wheat pitas
-firm tofu (6 oz)
-3/4 tbs. olive oil
-1/2 orange bell pepper (diced)
-small zucchini (diced)
-small yellow onion (diced)
-1/2 avacado (if you are so inclined)
-green onion (some peeps call them scallions)
-1/4 cup shredded reduced fat mozzarella (forget the cheese if you want to keep this vegan style :)
-1/2 orange bell pepper (raw)
Tony is such a great helper...getting the fixens all ready to go!
What to do:
-cut the tofu into small squares (about the size of a quarter), sauté the tofu and olive oil in a skillet until the tofu is lightly browed (about 5 min), remove the tofu and put aside. Add the green bell pepper, zucchini, and yellow onion to the pan (add a small amount of olive oil if there isn't enough left in the skillet). Saute the veg for about 3 min, then add the tofu back to the mixture. Let the tofu and veg sauté for about 2 more minutes and remove.
**We add a small amount of salt, pepper, red pepper flakes, and chili powder to this mix while it's sautéing.
- Once the mix is done sautéing, you get to make your taco!! You like avocado? Great! You can add it to your taco! You hate green onion?!?! Leave them off your super healthy taco. You can have it the way you like it!!
*Just a little side note...I include all of the ingredients in the calorie count, so if you don't use the cheese or avocado- the count will be a little less!
I'm no "food photographer" and will never claim to be...but doesn't this healthy food look DELISH?!?! Well it is...you should totally try this at home!
